1L (4 cups) chicken stock  
1 tbs olive oil  
1 brown onion, finely chopped  
  2 garlic cloves, crushed  
  330g (1 1/2 cup) arborio rice  
 40g (1/2 cup) shredded parmesan  
 4 eggs  
  180g (2 cups) dried (packaged) breadcrumbs  
 150g (1 cup) plain flour  
  100g mozzarella, cut into 1.5cm pieces  
  Vegetable oil, to deep-fry  
  Tomato relish or chutney, to serve  
  Bought marinated olives, to serve  
  Bought marinated feta, to serve

Method
  1. Place the stock in a medium saucepan over high heat and bring just to the boil. Cover and reduce heat to low. Hold at a gentle simmer.
  2. Meanwhile, heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook, covered, stirring occasionally, for 5 minutes or until the onion is soft.
  3. Add the rice to the onion mixture and cook, stirring, until the grains appear slightly glassy. Add a ladleful (about 125ml/1/2 cup) of the simmering stock to the rice mixture and stir constantly with a wooden spoon until the liquid is completely absorbed. Continue to add the stock, 1 ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding the next ladleful, for 20 minutes or until the rice is tender yet firm to the bite and the risotto is creamy. Stir in the parmesan. Set aside for 2-3 hours to cool completely. Add 2 eggs and stir until well combined.
  4. Place the breadcrumbs on a large plate. Place the flour in a bowl. Crack the remaining eggs into a separate bowl and use a fork to lightly whisk. Use wet hands to shape 2 tablespoons of the risotto mixture into a ball. Press your thumbs into the centre of the ball to make an indent. Place a piece of mozzarella in the indent, then mould the risotto mixture around the mozzarella to enclose. Repeat with the remaining risotto mixture and mozzarella to make 28 balls.
  5. Roll the risotto balls in the flour and shake off any excess. Dip in the egg, then in the breadcrumbs, pressing to coat. Place on a large plate. Place in the fridge for 30 minutes to chill.
  6. Add enough oil in a large saucepan to reach a depth of 5cm. Heat to 190°C over medium-high heat (when the oil is ready a cube of bread will turn golden in 10 seconds). Add 7 risotto balls to the oil and cook, turning occasionally, for 4-5 minutes or until golden. Use a slotted spoon to transfer to a plate lined with paper towel. Repeat, in 3 more batches, with the remaining risotto balls, reheating the oil between batches.
  7. Place the risotto balls on a serving plate and serve with tomato chutney and marinated olives and feta.

Smoked Brisket

Ingredients

    1/4 cup kosher salt
    1/4 cup sugar
    2 tablespoons garlic powder
    2 tablespoons onion powder
    2 tablespoons Spanish paprika
    2 tablespoons chili powder
    1 tablespoon celery salt
    1 tablespoon lemon pepper
    1 tablespoon freshly ground black pepper
    1 teaspoon freshly ground white pepper
    1 teaspoon cayenne pepper
    1 (5 to 8 pound) beef brisket (flat cut)
    4 cups oak or hickory wood chips, soaked in water for 30 minutes, drained
    1 cup apple juice
    1 1/2 cups your favorite BBQ sauce, for serving

Directions

Special equipment: spray bottle for apple juice
Combine all the spices in a bowl, mix well. Pat the spice rub onto the meat, making sure to heavily season the entire surface area of the brisket. Cover or wrap the brisket and let it sit at room temperature while getting the smoker or charcoal grill fired up. Do not leave at room temperature for longer than 1 hour.
The grill is ready when the charcoal has burned to a white ash. If using a grill instead of a smoker, arrange the coals on 1 side of the grill, leaving an area large enough for the brisket to cook indirectly with no coals directly underneath the meat.
When the grill has reached 200 to 225 degrees F, scatter 1/4 of the wood chips over the coals, close the grate, put the brisket on the grill and close the lid.
Maintain a 200 to 225 degree F cooking temperature inside the grill, adding coals every 2 hours or as necessary. Add wood chips and spray the brisket with apple juice every time you add new coals. Try not to lift the lid of the grill at any other time.
When the brisket reaches an internal temperature of 165 to 170 degrees F on an instant read meat thermometer (after about 4 to 5 hours), remove it from the grill and double wrap in aluminum foil to keep the juices from leaking out. Return the brisket to the grill (or smoker) The brisket is finished cooking when it is very tender and reaches an internal temperature of 190 degrees F, about another 1 to 2 hours. Let rest for 45 minutes, then unwrap and slice. Serve with BBQ sauce on the side.

Ingredients 

    1 handful fresh mint leaves (about 1 large sprig) plus more for garnish
    1 1/2 ounces aged rum
    1/2 ounce freshly-squeezed lime juice (1 lime)
    1 to 1 1/2 teaspoons superfine sugar or 1/2 ounce Simple Syrup, recipe follows
    2 dashes bitters, (recommended: Angostura)
    Ice cubes
    1 1/2 to 2 ounces dry Champagne, Prosecco or other sparkling wine

Directions

Muddle the mint leaves with the rum, lime juice, Simple Syrup, and bitters in a cocktail shaker. Add ice, cover, and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, the drink is ready when the shaker mists up.) Pour the muddled liquid into a chilled champagne flute, holding back the ice, but letting some of the mint leaves fall into the glass. Add enough Champagne to almost fill the glass to the top. Garnish with a sprig of mint. Drink.
Simple Syrup:
1 cup sugar
1 cup water
Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator.
Yield: about 1 1/2 cups

Ingredients
1 cup chicken broth
2 medium slices onion
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/2 teaspoon salt
1 pound cooked and cubed lobster meat
1/2 teaspoon Worcestershire sauce
1 pinch ground cayenne pepper
Directions
In a small frying pan place 1/4 cup chicken broth and the onion. Cook over a low heat for 5 to 7 minutes.
In a medium size pot over medium heat melt the butter. Slowly whisk in flour. Whisk until a creamy mixture is created.
Gradually pour in broth, whisking constantly. Whisk in milk, salt, onion, lobster meat, Worcestershire sauce and cayenne pepper. Heat until soup is almost boiling. Do not boil the soup as the milk will curdle when boiled.

Ingredients:
40 small shrimp, peeled and deveined
1 (12 ounce) package linguine pasta
1/4 cup butter, melted
4 tablespoons diced onion
4 teaspoons minced garlic
1 cup half-and-half
2 teaspoons ground black pepper
6 tablespoons grated Parmesan cheese
4 sprigs fresh parsley
4 slices lemon, for garnish
Directions: 

Cook pasta in a large pot of boiling water until al dente. Drain.
Meanwhile, melt butter in a large saucepan. Saute onion and garlic over medium heat until tender. Add shrimp and saute over high heat for 1 minute, stirring constantly.
Stir in half-and-half. Cook, stirring constantly, until sauce thickens.
Place pasta in a serving dish, and cover with shrimp sauce. Sprinkle with black pepper and Parmesan cheese. Garnish with parsley and lemon slices.

Ingredients:
 Oz Tequila
 1 Oz Orange liqueur (always prefer cointreau, but a simple triple sec is good enough)
Juice of 1 lime or lemon (we always prefer limes!)
 0.5 Oz of simple syrup or Lime Cordial
   8 Ice cubes or crushed ice
Directions:
     Step 1: Pour all ingredients into the shaker.
     Step 2: Add 8 ice cubes
     Step 3: Add the fresh lime juice or just squeeze a whole lime inside
     Step 4: Shake it hard! 12 times at least
     Step 5: Strain the cocktail into your chilled glass or strain over ice (margarita on the rocks)
     Step 6: Place a lime peel on the rim of the glass or put salt on the rim of the glass. If you want to "salt your rim" check out our cocktail guru tip at the bottom of this page.
     Step 7: Drink or serve it, your Perfect Margarita is ready to drink!
     You can also use:
Premium tequila's like Patron or Don Julio, they cost more but you will be sure to taste their quality.
